Can any manure be used in organic?

No. There are restrictions on origin (e.g. from intensive livestock) and you must confirm the authorised-input list and the certifier’s rules.

Better one big dose or regular applications?

Modest, regular applications give a better soil response and lower risk of excess that raises vigour and disease susceptibility.
