Sparkling — Champagne (Traditional Method) Style Winemaking Protocol

The benchmark traditional-method sparkling — a lean base wine given a second fermentation in bottle, long autolytic ageing on lees and disgorgement, for biscuity complexity and a fine mousse.

Champagne is a whole second process built on top of a base wine. From early-picked, high-acid, low-alcohol base wines (of Chardonnay, Pinot Noir and Pinot Meunier) the winemaker assembles a blend, then triggers a second fermentation inside the sealed bottle to capture carbon dioxide, ages the wine for months or years on the spent yeast lees for biscuity autolytic complexity, and finally removes those lees by riddling and disgorgement before setting the sweetness with a dosage.

The base wine is deliberately lean and neutral — it is a canvas, not the finished wine. The character comes from the blend (including older reserve wines for non-vintage consistency), from how long the wine sits on its lees, and from the dosage. The dial runs from fresh and zesty (shorter lees, lower dosage) to rich and autolytic (long lees ageing).

How this style is made

Grapes and viticulture

The classic trio is Chardonnay (finesse, citrus, ageing), Pinot Noir (structure and body) and Pinot Meunier (fruit and early approachability), grown on cool, chalky Champagne soils.

A Blanc de Blancs is all Chardonnay; a Blanc de Noirs all black grapes — the grape mix is the first stylistic choice.

Harvest for a base wine

Pick early, at roughly 17–19 °Brix, for a high-acid, low-alcohol base — exactly the lean, tart wine a still table wine would avoid. Hand-harvest whole bunches and press them gently, especially the black grapes pressed to a white juice.

Keep the first-press cuvée separate from the later taille fractions, which carry more phenolics and colour.

Base wine (vin clair) fermentation

Ferment the base wines dry, cool and clean. Whether they go through malolactic is a house-style choice — full malolactic for roundness and a softer wine, blocked to keep bracing acidity and ageing potential.

The base wines are kept as many separate lots, by grape, village and press fraction, for the assemblage to come.

Assemblage — the blend

Blending is the heart of Champagne. The winemaker assembles grapes, villages and press fractions, and — for a non-vintage cuvée — a proportion of older reserve wines to hold the house style consistent from year to year.

A vintage cuvée, by contrast, is a single year, declared only in the best seasons.

Tirage — bottling for the second fermentation

The blend is bottled with a liqueur de tirage — sugar and yeast (plus riddling adjuvants) — and sealed under a crown cap. This sets up the second fermentation inside the bottle.

The amount of sugar (about 24 g/L) sets the final pressure, around 6 bar.

Second fermentation in bottle

In a cool cellar (around 10–12 °C) the added yeast slowly ferments the tirage sugar. Because the bottle is sealed, the carbon dioxide dissolves into the wine instead of escaping, building the pressure and the mousse, and adding a little alcohol.

A slow, cool second fermentation gives a finer, more persistent bead.

Lees ageing (autolysis) — the flavour engine

The bottles then rest on the spent yeast lees. As the dead yeast break down (autolysis), they release mannoproteins and compounds that give the brioche, biscuit and toast character and a creamier texture. A minimum applies — 15 months for non-vintage, three years for vintage — but many wines age far longer.

This lees time is the single biggest lever on complexity and texture.

Riddling and disgorgement

To remove the lees, the bottles are gradually tilted and turned (riddling, remuage) — by hand on pupitres or by gyropalette — until the sediment collects in the neck. The neck is then frozen and the plug of lees expelled under pressure (disgorgement, dégorgement).

The wine is now clear and sparkling, but bone-dry and very acidic.

Dosage and finishing

A dosage — the liqueur d'expédition, wine with a little sugar — is added to top up the bottle and set the final sweetness, from Brut Nature (essentially none) through Extra Brut and Brut to Demi-sec. It balances the high acidity to the house style.

The bottle is then corked, caged and given a period of rest before release; oxygen pickup at disgorgement and dosage is minimised, and SO₂ adjusted.
